Batter Mixture:
- 2 cups almond flour
- 2/3 cup confectioners' sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- kosher salt
- 8 oz. orange juice
- 5 cup applesauce unsweetened
- 1 cup cranberries fresh or frozen
Orange Juice Glaze:
- 3 tbsp orange juice
- 2 tbsp confectioners' sugar
- 1 tsp vanilla extract
- cinnamon sprinkle

Preheat the oven to 350°F and lightly grease the loaf pan.
In a large mixing bowl, combine the almond flour, confectioners' sugar, baking powder, baking soda, and kosher salt. Mix until well combined.
Stir to combine the applesauce, orange juice, and vanilla extract with the almond flour mixture. Mix until everything is incorporated.
In a prepared greased loaf pan, pour the batter and bake for 60 minutes; let it cool.
Meanwhile, make the orange juice glaze, by combining the orange juice, confectioners' sugar, vanilla extract, and cinnamon.
Over the baked bread, drizzle with orange juice glaze and sprinkle with cinnamon. Enjoy!
