Ingredients
  

Batter Mixture:

  • 2 cups almond flour
  • 2/3 cup confectioners' sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • kosher salt
  • 8 oz. orange juice
  • 5 cup applesauce unsweetened
  • 1 cup cranberries fresh or frozen

Orange Juice Glaze:

  • 3 tbsp orange juice
  • 2 tbsp confectioners' sugar
  • 1 tsp vanilla extract
  • cinnamon sprinkle

  • Preheat the oven to 350°F and lightly grease the loaf pan.
  • In a large mixing bowl, combine the almond flour, confectioners' sugar, baking powder, baking soda, and kosher salt. Mix until well combined.
  • Stir to combine the applesauce, orange juice, and vanilla extract with the almond flour mixture. Mix until everything is incorporated.
  • In a prepared greased loaf pan, pour the batter and bake for 60 minutes; let it cool.
  • Meanwhile, make the orange juice glaze, by combining the orange juice, confectioners' sugar, vanilla extract, and cinnamon.
  • Over the baked bread, drizzle with orange juice glaze and sprinkle with cinnamon. Enjoy!
