Creamy vegan sorbet with a fresh tropical fruit flavor
- ½ cup unsweetened dried coconut
- 2 banana ripe, peeled and frozen
- 2 cup pineapple chunks fresh or frozen, divided
- ½ cup lemon juice
- ½ tsp vanilla extract
- 1 lemon peeled, chopped into small bits
Soak the dried coconut in hot water for 15 minutes. Drain.
In a high-powered blender, put coconut, banana, pineapple, lemon juice, and vanilla. Blend until pureed smooth.
Stir in lemon bits.
Divide into 4 serving bowls.
