  • ½ cup unsweetened dried coconut
  • 2 banana ripe, peeled and frozen
  • 2 cup pineapple chunks fresh or frozen, divided
  • ½ cup lemon juice
  • ½ tsp vanilla extract
  • 1 lemon peeled, chopped into small bits


  • Soak the dried coconut in hot water for 15 minutes. Drain.
  • In a high-powered blender, put coconut, banana, pineapple, lemon juice, and vanilla. Blend until pureed smooth.
  • Stir in lemon bits.
  • Divide into 4 serving bowls.
