  • 1 small white onion chopped
  • ½ large zucchini chopped
  • 1 bell pepper seeded and chopped
  • 2 cups black beans cooked
  • 2 cups baby spinach roughly chopped.
  • cup black olives sliced
  • 3 green onions chopped
  • ½ cup cilantro chopped

Instructions
 

Let's Begin!

  • In a large skillet, sauté together the onion, zucchini, and bell pepper with oil until softened and fragrant.
  • Add cooked black beans and heat just until warm.
  • Stir in the baby spinach, and cook until wilted. remove from heat.
  • Add black olives, green onions, and cilantro. Season with salt and pepper to taste.
