- 500 grams chickpeas cooked and drained
- 2 red onions finely chopped
- 2 medium tomatoes finely chopped
- 8 cloves garlic
- 2 green chili peppers
- 1 thumb ginger peeled
- 3 tbsp vegetable oil
- ½ tsp cloves
- 5 curry leaves
- 1 tbsp chili powder
- ½ tsp coriander powder
- ⅓ tsp garam masala
- ½ tsp turmeric powder
- 1 tsp chole masala
- ½ tsp kosher salt or to taste
- 1 cup vegetable stock or water
- 1 bunch coriander leaves chopped
Let's Begin!
In a food processor, add the garlic, chili peppers, and ginger. pulse until a rough paste is formed.
Heat the oil in a medium pot over medium heat. Add the cloves and chopped onions. Stir until the onions are lightly browned and caramelized.
Add the garlic paste and tomatoes, then cook for 5 minutes or until fragrant.
Add the curry leaves, chili powder, coriander powder, garam masala, turmeric powder, chole masala, and salt. Mix thoroughly until fully combined.
Carefully pour the cooked chickpeas and vegetable stock or water. Mix well.
Cover and cook for 10 minutes. Adjust seasoning to your preference, then stir in the coriander leaves.
