  • 500 grams chickpeas cooked and drained
  • 2 red onions finely chopped
  • 2 medium tomatoes finely chopped
  • 8 cloves garlic
  • 2 green chili peppers
  • 1 thumb ginger peeled
  • 3 tbsp vegetable oil
  • ½ tsp cloves
  • 5 curry leaves
  • 1 tbsp chili powder
  • ½ tsp coriander powder
  • tsp garam masala
  • ½ tsp turmeric powder
  • 1 tsp chole masala
  • ½ tsp kosher salt or to taste
  • 1 cup vegetable stock or water
  • 1 bunch coriander leaves chopped

Let's Begin!

  • In a food processor, add the garlic, chili peppers, and ginger. pulse until a rough paste is formed.
  • Heat the oil in a medium pot over medium heat. Add the cloves and chopped onions. Stir until the onions are lightly browned and caramelized.
  • Add the garlic paste and tomatoes, then cook for 5 minutes or until fragrant.
  • Add the curry leaves, chili powder, coriander powder, garam masala, turmeric powder, chole masala, and salt. Mix thoroughly until fully combined.
  • Carefully pour the cooked chickpeas and vegetable stock or water. Mix well.
  • Cover and cook for 10 minutes. Adjust seasoning to your preference, then stir in the coriander leaves.
  • Serve and enjoy with family and friends!
