Coconut Milk Overnight Oats

These coconut milk overnight oats are easy to make with basic plant-based ingredients. Ideal for a healthy breakfast to enjoy. Coconut milk and unsweetened coconut flakes give the in-depth coconut flavor in these overnight oats. These are gluten-free and dairy-free. Aside from being healthy, they are customizable and can be topped with your favorite fresh or frozen berries along with slivered almonds. Refrigerate and enjoy!

Ingredients
  

  • 1/2 cup old-fashioned oats
  • 6 oz coconut milk light
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • 2 tbsp coconut flakes unsweetened
  • 1 tsp chia seeds
  • 2 tbsp mini chocolate chips vegan, optional
  • 3 tbsp berries fresh or frozen, optional
  • 3 tbsp almonds slivered, chopped, optional

Instructions
 

  • In a mason jar, put all together the ingredients. Mix well using a spoon.
  • Refrigerate overnight or at least 8-7 hours.

Notes

  • They can be eaten warm and chilled. If desired to eat warm set your microwave for at least 1-2 minutes. And you can make them in advance.
