  • 1 cup medjool dates pitted
  • cup full-fat coconut milk
  • ½ cup Dutch-processed cocoa powder plus more for dusting
  • 1 pinch kosher salt

  • Soak the dates in warm water for 10 minutes, then drain.
  • Blend the dates and coconut milk until very smooth.
  • Melt the dark chocolate over a double boiler or in the microwave.
  • In a medium bowl, combine the date paste, cocoa powder, and salt. Stir to combine.
  • Stir in the melted chocolate. It will get quite thick.
  • Press the fudge mixture into an 8 × 5-inch pan lined with parchment paper.
  • Sprinkle the top with more cocoa powder, then refrigerate overnight.
