- 3 tbsp flax egg
- 2 tbsp apple cider vinegar or lemon juice
- 4 oz. molasses
- 1 cup water hot
- 2 tsp vanilla extract
Dry ingredients:
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 3 tsp baking powder
- 3/4 cup brown sugar light
- 2 tbsp ginger ground
- 2 tsp cinnamon ground
- 1/2 tsp cloves ground
- 1 tsp kosher salt
- 1/2 tsp allspice
Frosting ingredients:
- 3 oz. vegan cream cheese
- 3 tbsp vegan butter softened
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- almond milk adjust if needed
Let's get baking!
Preheat the oven to 350°F and prepare the loaf pan with parchment paper.
In a mixing bowl, combine together the wet ingredients from vegetable oil to vanilla extract. Mix them well and set them aside.
In a separate mixing bowl, combine together the dry ingredients until everything is incorporated; stir them into the wet mixtures until fully combined.
Pour the mixtures into a prepared bread pan and bake for 55 minutes or until golden brown. Allow cooling for at least 10 minutes.
Meanwhile, prepare the frosting by combining all the ingredients in a large mixing bowl. Mix them well until smooth.
Serve and drizzle with prepared frosting before slicing.
