Indian Vegetable Fritters (Pakora)

Let's gather the ingredients!
- 2¼ cups chickpea flour
- 1½ tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp chilli powder
- 2 tsp kosher salt
- ¾ cups water plus more if needed
- 2 cups onions sliced very thinly
- 2½ cups potato grated
- 2 large red chili finely chopped, opt-out if you don't like spicy
- 1 tbsp ginger finely grated
- 2 tbsp cilantro finely chopped
Let's Begin!
In a large heavy-based pot, Heat 1/2-inch of oil to 350°F.
In a large bowl, mix together the chickpea flour, turmeric, cumin, coriander, chili powder, and salt. Carefully whisk in the water to form a thick pancake batter. add more water if it's too thick.
Add the Onion, potato, ginger, chili, and cilantro. Mix well with a wooden spoon. It should be a thick batter, almost paste-like.
Drop 2 tbsp of batter roughly formed into a patty shape into the oil. I use my hands but you can also use 2 tablespoons to form. Be careful not to overcrowd the pot, it will lower the temperature too much.
Fry for 2-3 minutes until golden. Drain on paper towels.
