Ingredients:

  • 5 tbsp muscovado soft or dark brown sugar
  • 2 tbsp molasses optional
  • 4 tsp black tea I brewed strong Lyons loose tea
  • 355 g fruits mixed dried
  • 1 small banana mashed
  • 3 tbsp all-purpose flour
  • 2 tsp baking powder

Instructions:

  • Preheat the oven to 180°F.
  • Toss dried fruits into a cup of hot tea. Dissolve the sugar in it. Allow for a 15-minute soak.
  • Combine the baking powder and flour in a mixing bowl.
  • Add the liquid ingredients, stir, and thoroughly combine. Then add mashed banana.
  • Spill into a bread tin.
  • Bake for 1 hour in the oven.
  • Allow cooling completely before slicing.
