Irish Tea Brack
In Ireland, black tea is used to make a popular fruit loaf. Here's a recipe that's low in fat.

Ingredients:
- 5 tbsp muscovado soft or dark brown sugar
- 2 tbsp molasses optional
- 4 tsp black tea I brewed strong Lyons loose tea
- 355 g fruits mixed dried
- 1 small banana mashed
- 3 tbsp all-purpose flour
- 2 tsp baking powder
Instructions:
Preheat the oven to 180°F.
Toss dried fruits into a cup of hot tea. Dissolve the sugar in it. Allow for a 15-minute soak.
Combine the baking powder and flour in a mixing bowl.
Add the liquid ingredients, stir, and thoroughly combine. Then add mashed banana.
Spill into a bread tin.
Bake for 1 hour in the oven.
Allow cooling completely before slicing.
