Luck of the Irish Green Soda Bread
This Green Soda Bread recipe for the Luck of the Irish is vegan, contains no added fat, has a healthy green color, and is festive. This is ideal for St. Patrick's Day!

Ingredients:
- 1-2 cups all-purpose flour
- 12 oz whole-wheat flour or pastry flour
- 1 tsp baking soda
- ¼ tsp baking powder
- kosher salt
- 8 oz milk non-dairy
- 2 tsp apple cider vinegar
- 2 cups spinach fresh
- rolled oats sunflower seeds, or caraway seeds for sprinkling on top
Instruction:
Preheat the oven to 425°F.
In a large mixing bowl, mix the baking soda, baking powder, flour, and salt. Set them aside.
Blend non-dairy milk, spinach leaves, and vinegar till completely smooth using a blender.
Drizzle all of the spinach and milk mixture into the flour, except about 1 tbsp, and stir to combine.
Make small, 6-inch loaves by dividing the dough into three pieces. Flatten them gently so they cook evenly, and make slash "X" to the top. (See note 1)
Bake for 30 minutes, just until lightly browned and the tops have a crusty appearance.
Remove them from the oven and set them to cool on a wire rack. For added crunch, serve with preserves, olive oil, or vegan butter.
Notes:
- Add a little extra flour to your dough balls and place them on a parchment-lined baking sheet. Do not get to depth; merely slash the surface. If you're dusting something on top, sweep the loaves with the ones left spinach/milk mixture before dusting the toppings.
- Sunflower seeds, caraway seeds, roll oats are all good toppings to use before baking this loaf.
- You can definitely skip the spinach if you don't like it. Simply replace it with another 2 ounces of non-dairy milk.
