Mushroom Loaded Potato Skins
I'm sure we can all agree that potatoes are a wonderful blank canvas for flavor. But when topped with savory mushrooms, zesty vegan sour cream, and herbs, they become truly irresistible. These potato skins make for delicious lunch or dinner appetizers, or even side dishes.

Let's gather the ingredients!
- 6 medium russet potatoes scrubbed
- 2 cups mushroom sliced
- 2 cloves garlic minced
- ½ cup almond milk
- 1 tbsp Dijon mustard
- 1 shallot chopped
- 3 tbsp capers drained
- 5 sun-dried tomatoes chopped
- 1 scallion finely chopped
- kosher salt and ground black pepper. to taste
- 2 tbsp vegan sour cream (see notes for the recipe)
- chili flakes optional, for garnish
- parsley optional, for garnish
Let's Begin!
Preheat the oven to 400°F.
Use a fork to pierce the potatoes in several places. Place them on a baking sheet and bake for 55 to 60 minutes until tender. Let the potatoes cool until they are easy enough to handle.
Meanwhile, Saute the mushrooms and garlic with oil until the mushrooms have lightly browned.
Cut the potatoes in half lengthwise, then use a spoon to scoop out each potato half, leaving about ¼-inch of potato on the shell.
Transfer scooped potato flesh to a bowl, then mash with the cooked mushrooms, almond milk, mustard, shallots, capers, sun-dried tomatoes, and scallions. Mix well, then season with salt and pepper to taste.
Fill the potato skins with the mixture and bake until golden, 10 to 20 minutes.
Serve potatoes warm or at room temperature, drizzled with vegan sour cream, and topped with chili flakes and parsley.
