- 8½ ounces Penne Pasta
- 2 cups arugula leaves loosely packed
- 1 cup peas fresh or frozen, thawed
Pesto
- 1 cup arugula leaves firmly packed
- ½ cup peas fresh or frozen, thawed
- 1 tbsp mint leaves
- 2 cloves garlic
- 2 tbsp pine nuts
- ½ lemon juice and zest
- salt and pepper to taste
- 3 tbsp extra virgin olive oil
