  • ounces Penne Pasta
  • 2 cups arugula leaves loosely packed
  • 1 cup peas fresh or frozen, thawed

Pesto

  • 1 cup arugula leaves firmly packed
  • ½ cup peas fresh or frozen, thawed
  • 1 tbsp mint leaves
  • 2 cloves garlic
  • 2 tbsp pine nuts
  • ½ lemon juice and zest
  • salt and pepper to taste
  • 3 tbsp extra virgin olive oil

Instructions
 

Let's Begin!

  • Cook the pasta by following the package directions. When cooked to al dente, remove from heat and drain the pasta.
  • In the bowl of your food processor, add the arugula, peas, mint leaves, garlic, pine nuts, lemon juice, lemon zest, salt, and pepper.
  • Pulse until finely chopped. With the motor still running, add olive oil in a slow stream until emulsified and creamy.
  • In a large bowl, toss together warm pasta with pesto, arugula, and peas. Season with freshly cracked pepper.
