Pad Thai

  • 1 zucchini spiralized or sliced with a vegetable peeler
  • 2 yellow squash spiralized or sliced with a vegetable peeler
  • 1 red bell pepper thinly sliced
  • ½ cup cabbage shredded
  • ½ cup mung bean sprouts
  • 2 stalks green onions thinly sliced
  • 2 tbsp cilantro leaves chopped
  • 2 tbsp peanuts roasted
  • 1 lime cut into wedges

Peanut Sauce

  • 2 tbsp peanut butter unsweetened
  • 2 tbsp soy sauce
  • tbsp lime juice
  • 2 tsp ginger grated
  • 2 cloves garlic minced
  • 1 tbsp black sesame seeds toasted
  • 3 dates pitted
  • ½ tsp cayenne or red chili flakes
  • ½ cup water

Instructions
 

Let's Begin!

  • In a blender, add all the sauce ingredients together, and pulse until smooth. adjust the taste to your preference.
  • In a large bowl, combine the zucchini, yellow squash, bell pepper, and cabbage. Pour the peanut sauce, then toss together until evenly mixed.
  • Top with green onions, bean sprouts, cilantro, cashews, and lime wedges.
  • Serve chilled or at room temperature.
