For the cookies:
- 1 1/2 oz. almond flour
- 1/2 cup confectioners' sugar
- 1/2 cup butter vegan, softened
- 2 tsp vanilla extract
- 1 tsp spice holiday mix
For the holiday spice mix:
- 2 tbsp confectioners' sugar
- 1 1/2 tsp cinnamon or pumpkin spice
- 1 ts[ kosher salt
Bake and enjoy!
Preheat the oven to 350°F and line a baking sheet with parchment paper.
To make the holiday spice mix, in a small mixing bowl, combine together the confectioners' sugar, ground cinnamon, and kosher salt.
In a separate bowl, whisk together the almond flour, confectioners' sugar, vegan butter, vanilla extract, and holiday spice mix. Mix them well.
Using a small scoop, scoop the dough and form balls, and dip them into the confectioners' sugar.
Transfer the cookie balls to a baking sheet and bake them for 10 minutes.
Allow them to cool completely and sprinkle with a holiday spice mix.
