- 2 cloves garlic finely minced
- ½ onion finely chopped
- ½ carrot diced
- ⅓ cup peas fresh or frozen
- ¼ cup cashews raw
- 3 cups jasmine rice cooked, day old
- 2 tbsp soy sauce
- 1½ cups pineapple chunks fresh or canned then drained
- ½ cup green onion sliced
Let's Begin!
Heat the oil in a wok or large non-stick skillet over high heat.
Add the garlic and onion, cook for 1 minute until fragrant.
Add the carrots, peas, and cashews and cook until slightly browned.
Carefully add the rice and soy sauce, then cook, stirring constantly, until rice grains go from being wet with sauce to sort of caramelized.
Add the pineapple, and stir for just 30 seconds to warm through.
