  • 2 cloves garlic finely minced
  • ½ onion finely chopped
  • ½ carrot diced
  • cup peas fresh or frozen
  • ¼ cup cashews raw
  • 3 cups jasmine rice cooked, day old
  • 2 tbsp soy sauce
  • cups pineapple chunks fresh or canned then drained
  • ½ cup green onion sliced

Let's Begin!

  • Heat the oil in a wok or large non-stick skillet over high heat.
  • Add the garlic and onion, cook for 1 minute until fragrant.
  • Add the carrots, peas, and cashews and cook until slightly browned.
  • Carefully add the rice and soy sauce, then cook, stirring constantly, until rice grains go from being wet with sauce to sort of caramelized.
  • Add the pineapple, and stir for just 30 seconds to warm through.
  • Stir in the green onions then serve!
