- 3 flax eggs 1 flax egg = 1 tbsp ground flax seeds (7g+ 3 tbsp water)
- 1/2 cup EVOO Extra Virgin Olive Oil

- 1 tbsp baking powder 16g
- 1/4 tsp baking soda

Preheat the oven to 200ºC.
Cook apples: Peel them, cut them into 0.5cm pieces, and cook them in hot water or in the microwave (5 minutes) until soft.
Mix wet ingredients: Cooked apples and Date Paste - you can follow our recipe Healthy Sweetener Date Paste, milk (we use soy), oil, and flax eggs. You can also blend them until smooth.
Mix dry ingredients: Mix all dry ingredients in a large bowl.
Mix wet and dry ingredients and add cut cherries into pieces.
Transfer the batter to a greased muffin pan and bake it at 180°C for 25 minutes. Let cool before removing the muffins from the pan.
Notes:
- You can make our Healthy Frosting by adding 1 tbsp of cacao powder to make a chocolate frosting.
- You can add more cherries but keep in mind that the texture of the muffins would change because the fruit moistens the batter.
