- 3½ pounds potatoes cubed
- 5 cups kale shredded
- 1 cup white onion chopped
- 1 stick vegan butter
- 1½ tsp garlic minced
- ½ tsp black pepper ground
- 1 tsp kosher salt
- 1 cup almond milk or other unsweetened dairy-free milk
- 2 sprigs parsley garnish
