Vegan Jini Dosa

Let's gather the ingredients!
- 1 cup Dosa batter store-bought or made from scratch
- 2 tsp vegetable oil
Filling
- ¼ cup red onion chopped
- ½ cup green bell pepper chopped
- ½ cup tomato chopped
- 1 tbsp red chili sauce
- 2 tbsp garlic chutney
- 2 tbsp tomato chutney
- 1 tsp red chili powder
- 1 tsp kosher salt
- 2 bunch coriander leaves chopped
- Sambhar to serve
- coconut chutney to serve
Let's Begin!
Heat 1 tbsp of oil on a large non-stick skillet over medium heat.
Pour 1/2 cup of the Dosa batter into the middle of the pan, then carefully spread the batter all over the pan in an even circular motion.
Add half of each: onion, bell pepper, tomato, chili sauce, garlic chutney, tomato chutney, chili powder, salt, and coriander leaves. Using a potato masher or a large perforated spoon, mash all the filling on top of the dosa.
Spread the filling evenly and cook for 4-5 minutes or until the Dosa has lightly browned on the bottom.
Carefully roll up the Dosa, then repeat the steps with the other batch.
Serve with a side of Sambhar and coconut chutney.
