Vegan Zeppole (Traditional Italian Donuts or Pastry)
This traditional zeppole Italian pastry or donut is prepared in a healthy version. Filled with creamy pastry cream with plant-based milk and topped with Amarena or Fabbri cherries. But I like fresh cherries. This pastry is kid-friendly and the perfect treat for vegetarians. Ideal for any occasion and St. Joseph's Day.

For The Choux Pastry:
- 9 tbsps vegan butter
- 1 ½ tsp sugar powdered: organic or raw
- 8 oz water
- 1 cup all-purpose flour or any certified gluten-free flour
- 1 tbsp flax seeds and stir in 3 tbsp of water
For The Pastry Cream:
- 1 tbsp flax seeds and stir in 3 tbsp of water
- 2/3 cup almond milk or any plant-based milk
- 10 tbsp sugar powdered: organic or raw
- 2 ¼ tbsp corn starch or potato starch will work too
- pinch kosher salt
- 1 tsp vanilla extract
- sugar powdered: organic or raw, for sprinkle
- cherries optional, you can use fresh or frozen, or Amarena, Fabbri
Fluffy Choux Pastry:
Preheat the oven to 400ºF.
In a saucepan over medium heat, add the vegan butter, unrefined sugar, and water.
Add the flour generously and stir using a spoon till the mixture forms into pastry.
Combine flax seeds mixture at a time til they are completely combined.
Transfer the pastry into a piping bag and line a baking tray.
On a line baking sheet, pipe the pastry to form cream puffs or zeppole
Make a small hollow in the center of each cream puff or zeppole.
Bake for at least 30 minutes and transfer to a cooling rack.
Creamy Pastry Cream:
In a pot, mix the flax seeds mixture, unrefined sugar, potato or corn starch, kosher salt, and vanilla extract. Mix well.
In low heat, add gradually the plant-based milk till the mixture is completely combined and thickens.
Using a piping bag, fill the top of the pastry with creamy pastry cream.
Sprinkle each choux pastry with unrefined powdered sugar and top with cherries. Enjoy!
Cream Puff (if you prefer)
Make a small hollow in the center of each pastry.
Using a piping bag, make a small hole and fill it with pastry cream.
Dust with powdered sugar and top with cherries.
