- 1 medium onion finely chopped
- 2 cloves garlic minced
- ¼ tsp ginger grated
- 1½ tsp ground cumin
- 1 tsp ground coriander
- ¼ tsp cayenne pepper
- 14 ounce diced tomatoes
- 9 ounces pumpkin peeled and cut into 1-inch cubes
- ⅓ cup peanut butter
- 2 cups water
- 4 cups spinach fresh
Let's Begin!
Sauté the onion in the olive oil over medium heat for 5 minutes until soft and translucent.
Add the garlic and fresh ginger, and cook for another couple of minutes until fragrant.
Stir in the ground cumin, ground coriander, and cayenne pepper, then add the tomatoes, pumpkin, peanut butter, and water, and simmer for 15-20 minutes until the pumpkin is tender.
Turn off the heat and blend until smooth with a hand blender, or just mash if you prefer chunks.
Return to the heat, add the spinach, and cook for another couple of minutes until the spinach has wilted.
