  • tsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp cayenne pepper
  • 14 ounce diced tomatoes
  • 9 ounces pumpkin peeled and cut into 1-inch cubes
  • cup peanut butter
  • 2 cups water
  • 4 cups spinach fresh

  • Turn off the heat and blend until smooth with a hand blender, or just mash if you prefer chunks.
  • Return to the heat, add the spinach, and cook for another couple of minutes until the spinach has wilted.
  • Serve topped with fresh sliced chili, or roughly chopped peanuts. Serve with freshly cooked rice.
