African Pumpkin-Peanut Stew
Let's gather the ingredients!
- 1 tbsp olive oil
- 1 medium onion finely chopped
- 2 cloves garlic minced
- ¼ tsp ginger grated
- 1½ tsp ground cumin
- 1 tsp ground coriander
- ¼ tsp cayenne pepper
- 14 ounce diced tomatoes
- 9 ounces pumpkin peeled and cut into 1-inch cubes
- ⅓ cup peanut butter
- 2 cups water
- 4 cups spinach fresh
- Sauté the onion in the olive oil over medium heat for 5 minutes until soft and translucent.
- Add the garlic and fresh ginger, and cook for another couple of minutes until fragrant.
- Stir in the ground cumin, ground coriander, and cayenne pepper, then add the tomatoes, pumpkin, peanut butter, and water, and simmer for 15-20 minutes until the pumpkin is tender.
- Turn off the heat and blend until smooth with a hand blender, or just mash if you prefer chunks.
- Return to the heat, add the spinach, and cook for another couple of minutes until the spinach has wilted.
