Authentic Vegan Mexican Enchiladas
Enchiladas are an amazing classic Mexican dish filled with savory ingredients and wrapped up in a warm tortilla blanket. Whether it's one of your favorite dishes already or something new to try, I'll show you how to make easy and flavorful enchiladas that will have everyone asking for seconds (or thirds!).

- corn tortillas
- Black Bean and Veggie see above recipe
- enchilada sauce see notes for more information
- cheese of your choice see notes for more information
your choice of toppings:
- sliced green onions
- sliced black olives
- avocado
- vegan sour cream
- fresh cilantro
- lime wedges
Let's Begin!
Preheat oven to 350°F.
Pour enough sauce into a glass baking pan to cover the bottom of the pan.
Dip one tortilla in the remaining sauce, making sure to coat both sides. This works best if the sauce is still quite warm.
Put tortilla in the pan, add about 1/4 cup of filling, roll tightly, and set seam side down in the pan.
Repeat with remaining tortillas.
Pour the remaining enchilada sauce over the rolled enchiladas.
Cover with foil and bake for about 20 minutes until the sauce begins to darken.
Remove foil. Top with the vegan cheese of your choice. Return to oven for about 3-5 minutes to heat.
Add toppings and serve.
Alternatively, put enchiladas on plates and allow each person to add their own toppings.
