Autumn Spice Pear Cobbler

Filling:
- 3 tbsp butter vegan, unsalted
- 4 medium pears peeled and chopped or sliced
- 4 medium apples peeled and chopped or sliced
- 6 oz. raw sugar
- 2 oz. all-purpose flour
- 1/2 tsp cinnamon ground
- 1/4 tsp kosher salt
- 1/2 tsp vanilla extract
Topping:
- 12 oz. all-purpose flour
- 4 oz. raw sugar
- 1 tsp baking powder
- 1 tsp cinnamon ground
- 1/2 tsp cardamom ground
- 1/4 tsp ginger ground
- 1/4 tsp allspice ground
- 1/8 tsp nutmeg ground
- pinch kosher salt
- 2 oz. butter vegan, unsalted
- 2 oz. almond milk any plant-based milk will work
Filling mixture:
Preheat the oven to 350°F and spray a 9×13 inch baking dish.
In a skillet, melt the butter then add and stir the pears, apples, raw sugar, all-purpose flour, cinnamon, and kosher salt. Cook for 3-4 minutes, or until thickened.
Once thickened, remove from the heat and stir with vanilla extract then transfer into the prepared baking dish.
Prepare the topping:
Meanwhile, in a mixing bowl, stir to combine the all-purpose flour, raw sugar, baking powder, cinnamon, cardamom, ginger, allspice, nutmeg, and kosher salt.
Using a pastry blender, add the butter into the flour mixture until crumbles, and add the almond milk until the dough forms.
