BBQ Pulled Jackfruit Burger

- 2 20 oz can young green jackfruit in brine drained, rinsed, and dried
- 1 tbsp olive oil plus more for frying
- 1 medium yellow onion chopped
- 2 cloves garlic minced
- 1 Jalapeño seeded and finely chopped
- 1 tsp paprika
- 2 tsp cumin ground
- 1 tsp dried oregano
- 1 tsp coriander ground
- ½ tsp kosher salt
- ¾ cup barbecue sauce make sure it's vegan
- 4 hamburger buns lightly toasted
Let's Begin!
Place the jackfruit in a bowl. Using your fingers or forks, break apart the chunks of jackfruit into shredded pieces.
Add the paprika, cumin, oregano, coriander, and olive oil. Toss to combine and set aside.
Heat the oil in a large skillet. Add the onion and cook until translucent. Add the garlic and jalapeño and cook until the garlic is fragrant.
Add the seasoned jackfruit and cook until it begins to color and crisp, stirring occasionally.
Add the barbecue sauce, stir, and cook covered on low for 10 minutes. You may add water to make the sauce thinner.
Place the BBQ jackfruit pulled pork on the burger buns, top with veggies and toppings you prefer.
