- 1 cup corn kernels cooked
- 1 cup red kidney beans cooked
- ½ green bell pepper
- 1 handful parsley chopped
- 1 lime juice and ½ zest
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp cumin
- ⅓ tsp chili flakes
Avocado sauce
- 2 small avocados
- 1 clove garlic
- 1 handful parsley
- ½ lime juice
- ½ tsp kosher salt
- ½ tsp black pepper ground
Avocado sauce
Add the avocado, garlic, parsley, lemon juice, and spices to the food processor and blend until creamy.
Add s splash of water if you want s more runny consistency.

Spread the sauce on the tortilla, add some rice mixture, and roll the burrito.
