  • 6 flour tortillas

Rice salad

  • ½ cup brown rice cooked
  • 1 cup corn kernels cooked
  • 1 cup red kidney beans cooked
  • ½ green bell pepper
  • 1 handful parsley chopped
  • 1 lime juice and ½ zest
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp cumin
  • tsp chili flakes

Avocado sauce

  • 2 small avocados
  • 1 clove garlic
  • 1 handful parsley
  • ½ lime juice
  • ½ tsp kosher salt
  • ½ tsp black pepper ground

Let's Begin!

    Rice salad

    • In a large bowl, add all of the salad ingredients and mix very well.
    • Adjust seasoning to taste.

    Avocado sauce

    • Add the avocado, garlic, parsley, lemon juice, and spices to the food processor and blend until creamy.
    • Add s splash of water if you want s more runny consistency.

    Let's Assemble!

    • Spread the sauce on the tortilla, add some rice mixture, and roll the burrito.
    • Heat it up on a hot dry pan, then cut in half.
    • If preferred serve with vegan sou cream.
    • Enjoy with family and friends!
