Ingredients
  

  • 1/4 cup yellow onion chopped
  • 1 small carrot chopped
  • 1/2 tsp ginger minced and peeled
  • 2-3 tbsp tomato paste
  • 1-2 tbsp soy sauce
  • 4 oz canola oil
  • 2 oz rice vinegar
  • kosher salt to taste
  • black pepper optional
  • 1/2 tsp swerve optional

Instructions
 

  • In a food processor, combine the ingredients from carrot to kosher salt. Mix well till smooth.
  • Season to taste with black pepper and swerve, if necessary.
  • Refrigerate the dressing for 1-2 hrs before serving.
