Delicious Apple Crumble Bars
This recipe is perfect for the fall season and would make a great addition to your Thanksgiving Day feast. The bars are made with a delicious crumble topping and are packed with juicy apples. I love to serve them with a scoop of vegan vanilla ice cream or hot coffee.

Base:
- 3 cups all-purpose flour
- 7 tbsp confectioners' sugar
- 1 cup vegan butter at room temperature
Filling:
- 1 1/2 cups water cold
- 3 tbsp cornstarch
- 8 tbsp confectioners' sugar
- 2 tsp cinnamon ground
- 5 medium apples peeled, cored, and sliced; Honeycrisp or Granny Smith
Topping:
- 2 1/2 cups all-purpose flour
- 1 cup cinnamon ground
- 1 cup vegan butter
Bake the shortbread base:
In a large bowl, mix together the all-purpose flour, confectioners' sugar, and vegan butter. Mix them well until the dough forms.
Over a prepared baking tray, set the dough evenly into the bottom of the baking tray. poke the dough with the pork to easily bake.
Bake for 25 minutes or until golden brown. Set them aside.
Make the apple filling:
In a medium pot, stir together the cold water, cornstarch, confectioners' sugar, and cinnamon. Stir them well until everything is incorporated.
Add the diced apples and cook them for 10 minutes over medium-high heat. Remove from the heat and set them aside.
Make a crumb topping:
In a mixing bowl, mix the all-purpose flour, cinnamon, and vegan butter until it looks like breadcrumbs.
Let's get baking:
Over a baked shortbread, pour and spread the apple filling then add the prepared crumb topping.
Bake them for 50 minutes. Remove from the oven; allow cooling for one hour. Then, transfer them into a fridge and let them sit for 3 hours.
Once chilled, cut them into 12 squares and pair them with hot coffee or ice cream.
