- 4 tbsp tomato paste
- ¾ cup vegetable stock or water
- ½ medium eggplant thinly sliced rounds
- 1 zucchini thinly sliced rounds
- 2 medium Roma tomatoes thinly sliced rounds
- 1 medium red onion thinly sliced rounds
- ½ tsp kosher salt
- ¼ tsp black pepper freshly ground
- 1 tsp dried thyme

Preheat the oven to 400°F.
In a bowl, mix the tomato paste with vegetable stock, then pour it onto the bottom of a medium-sized baking dish.
