For The Farro Spinach Salad:
- 3 oz orange juice
- 2-3 tbsp red wine vinegar
- 4 tsp walnuts toasted, chopped
- 1 tbsp maple syrup pure
- 3 tsp Dijon mustard
- kosher salt to taste
- black pepper to taste
- 2 medium red beets peeled and cut into thick slices
- 6-7 cups spinach fresh, baby
- 3-4 cups Farro chilled cooked
- 2 small pears fresh, chopped and cored
- 4 small red onions chopped
For The Dressing: Place the orange juice to Dijon mustard in a small blender. Blend well till creamy. Season to taste with salt and pepper.
In a mixing bowl, mix beets and dressing; stir and combine.
Preheat the air fryer to 350°F.
Air-fry the beets for 15-20 minutes or till equally ruffled and brown.
In a mixing bowl, mix the farro, spinach, onion, and pears.
Pour the remaining dressing over the salad and stir to combine. Serve with beet chips on top.
