Ingredients
  

For The Farro Spinach Salad:

  • 3 oz orange juice
  • 2-3 tbsp red wine vinegar
  • 4 tsp walnuts toasted, chopped
  • 1 tbsp maple syrup pure
  • 3 tsp Dijon mustard
  • kosher salt to taste
  • black pepper to taste
  • 2 medium red beets peeled and cut into thick slices
  • 6-7 cups spinach fresh, baby
  • 3-4 cups Farro chilled cooked
  • 2 small pears fresh, chopped and cored
  • 4 small red onions chopped

Instructions
 

  • For The Dressing: Place the orange juice to Dijon mustard in a small blender. Blend well till creamy. Season to taste with salt and pepper.
  • In a mixing bowl, mix beets and dressing; stir and combine.
  • Preheat the air fryer to 350°F.
  • Air-fry the beets for 15-20 minutes or till equally ruffled and brown.
  • In a mixing bowl, mix the farro, spinach, onion, and pears.
  • Pour the remaining dressing over the salad and stir to combine. Serve with beet chips on top.
