- 3 tbsp vegetable oil or coconut oil
- 4 cloves garlic minced
- 1 tbsp ginger freshly grated
- 1 yellow onion chopped
- 3½ cups coconut milk full fat
- 3 cups squash peeled, deseeded, and chopped into 1½-inch cubes
- 1½ cups yardlong beans or green beans, sliced 2 inches
- 3 Thai chili peppers sliced, more if you want spicier
- pinch kosher salt
- pinch black pepper ground
Let's begin!
In a medium-sized pot over medium heat, pour oil and saute garlic and ginger until fragrant, not browned. Follow with onions, then saute until the onions turn soft and translucent.
Add the squash and coconut milk. simmer for 5-7 minutes, stirring occasionally, until the squash is soft and fork-tender.
Using the back of the ladle or fork, mash a few of the squash. This will help thicken the stew.
Add long beans and mix. You can also add your favorite greens like kale or spinach. You can also add mushrooms, tofu, seitan, or mock meat.
Finally, add the chili peppers, then season with salt and pepper to taste.
Simmer for another 5-6 minutes, then turn off the heat.
