Filipino Coconut Squash Stew
Let's gather the ingredients!
- 3 tbsp vegetable oil or coconut oil
- 4 cloves garlic minced
- 1 tbsp ginger freshly grated
- 1 yellow onion chopped
- 3½ cups coconut milk full fat
- 3 cups squash peeled, deseeded, and chopped into 1½-inch cubes
- 1½ cups yardlong beans or green beans, sliced 2 inches
- 3 Thai chili peppers sliced, more if you want spicier
- pinch kosher salt
- pinch black pepper ground
- In a medium-sized pot over medium heat, pour oil and saute garlic and ginger until fragrant, not browned. Follow with onions, then saute until the onions turn soft and translucent.
- Add the squash and coconut milk. simmer for 5-7 minutes, stirring occasionally, until the squash is soft and fork-tender.
- Using the back of the ladle or fork, mash a few of the squash. This will help thicken the stew.
- Add long beans and mix. You can also add your favorite greens like kale or spinach. You can also add mushrooms, tofu, seitan, or mock meat.
- Finally, add the chili peppers, then season with salt and pepper to taste.
- Simmer for another 5-6 minutes, then turn off the heat.
- Serve hot, preferably with rice or garlic fried rice on the side.
