  • 3 tbsp vegetable oil or coconut oil
  • 4 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 1 yellow onion chopped
  • cups coconut milk full fat
  • 3 cups squash peeled, deseeded, and chopped into 1½-inch cubes
  • cups yardlong beans or green beans, sliced 2 inches
  • 3 Thai chili peppers sliced, more if you want spicier
  • pinch kosher salt
  • pinch black pepper ground

Instructions
 

Let's begin!

  • In a medium-sized pot over medium heat, pour oil and saute garlic and ginger until fragrant, not browned. Follow with onions, then saute until the onions turn soft and translucent.
  • Add the squash and coconut milk. simmer for 5-7 minutes, stirring occasionally, until the squash is soft and fork-tender.
  • Using the back of the ladle or fork, mash a few of the squash. This will help thicken the stew.
  • Add long beans and mix. You can also add your favorite greens like kale or spinach. You can also add mushrooms, tofu, seitan, or mock meat.
  • Finally, add the chili peppers, then season with salt and pepper to taste.
  • Simmer for another 5-6 minutes, then turn off the heat.
  • Serve hot, preferably with rice or garlic fried rice on the side.
  • Enjoy with family and friends!
