Let's gather the ingredients!

  • 8 pcs tomato medium-sized
  • 1 cup quinoa cooked
  • 2 tbsp extra virgin olive oil
  • 1 pc onion diced
  • 2 cloves garlic minced
  • 8 oz mushrooms chopped
  • 1 tsp basil fresh, chopped
  • 1 tbsp parsley fresh, chopped
  • ½ tsp thyme dried
  • 1 tsp oregano dried

Instructions
 

  • Preheat oven to 375°F. Line a baking sheet with parchment paper, then set aside.
  • Core the tomatoes and set aside. Dice the now-removed core.
  • In a saucepan on medium heat, Pour the olive oil then saute the onions until translucent.
  • Add in garlic, diced tomato core, and mushroom. Cook until mushrooms have softened and begun to release juices.
  • Mix in the remaining spices, then briefly sauteing and mixing until well combined and aromatic. Remove fro heat, then mix in quinoa.
  • Fill the cored tomatoes with the mushroom quinoa mixture, then place on the prepared baking sheet.
  • Bake for 15-17 minutes until the tomatoes appear roasted.
  • Serve hot, and enjoy with family and friends!
