Baked Tomato with Quinoa and Mushroom
Ingredients
Let's gather the ingredients!
- 8 pcs tomato medium-sized
- 1 cup quinoa cooked
- 2 tbsp extra virgin olive oil
- 1 pc onion diced
- 2 cloves garlic minced
- 8 oz mushrooms chopped
- 1 tsp basil fresh, chopped
- 1 tbsp parsley fresh, chopped
- ½ tsp thyme dried
- 1 tsp oregano dried
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment paper, then set aside.
- Core the tomatoes and set aside. Dice the now-removed core.
- In a saucepan on medium heat, Pour the olive oil then saute the onions until translucent.
- Add in garlic, diced tomato core, and mushroom. Cook until mushrooms have softened and begun to release juices.
- Mix in the remaining spices, then briefly sauteing and mixing until well combined and aromatic. Remove fro heat, then mix in quinoa.
- Fill the cored tomatoes with the mushroom quinoa mixture, then place on the prepared baking sheet.
- Bake for 15-17 minutes until the tomatoes appear roasted.
- Serve hot, and enjoy with family and friends!
