Lemon and Mushroom Orzo
Let's gather the ingredients!
- 16 oz orzo pasta or 1 package
- 4 tbsp extra virgin olive oil
- ¾ lbs shiitake mushroom or other fresh mushroom
- ½ cup pecans chopped
- ½ cup micro herbs fresh
- 1 tsp lemon zest freshly grated
- 3 tbsp lemon juice
- 1 tsp kosher salt
- ½ tsp black pepper ground
- Cook the orzo in a pot of boiling water, according to package instructions. Drain and set aside.
- Meanwhile, in a large cast iron or skillet, heat 2 tbsp of olive oil over medium-high heat.
- Add mushrooms, then cook and stir until tender and browned.
- In a large bowl, place cooked orzo, mushroom, pecans, lemon zest, lemon juice, salt, pepper, and remaining olive oil. Toss together to combine.
