  • 16 oz orzo pasta or 1 package
  • 4 tbsp extra virgin olive oil
  • ¾ lbs shiitake mushroom or other fresh mushroom
  • ½ cup pecans chopped
  • ½ cup micro herbs fresh
  • 1 tsp lemon zest freshly grated
  • 3 tbsp lemon juice
  • 1 tsp kosher salt
  • ½ tsp black pepper ground

Let's Begin!

  • Cook the orzo in a pot of boiling water, according to package instructions. Drain and set aside.
  • Meanwhile, in a large cast iron or skillet, heat 2 tbsp of olive oil over medium-high heat.
  • Add mushrooms, then cook and stir until tender and browned.
  • In a large bowl, place cooked orzo, mushroom, pecans, lemon zest, lemon juice, salt, pepper, and remaining olive oil. Toss together to combine.
  • Garnish with micro herbs, then serve warm.
