Easy Garlic Mashed Cauliflower
Let's gather the ingredients!
- 2 heads cauliflower
- 4 tbsp extra virgin olive oil
- 4 cloves garlic minced
- ½ tsp kosher salt to taste
- 1 pinch black pepper to taste
- ⅓ cup almond milk plain
- Cut the cauliflower into even florets, then boil them in a large pot filled with boiling water on medium-high heat, until very tender.
- Remove from heat, then strain the florets. Set aside uncovered to cool slightly.
- In a small skillet over medium heat, saute the garlic in olive oil for 2-3 minutes or until just slightly browned. Turn off the heat, and set aside.
- Using a food processor, puree the cooked cauliflower until smooth or a little bit chunky, depending on your preference. Add the almond milk slowly while blending.
- Transfer the blended cauliflower to a large bowl, then add half of the garlic oil and half of the salt and pepper. Mix until well combined.
