  • lbs russet potato peeled and cut in quarters
  • ¼ cup almond milk or other plant milk
  • 2 tsp vegan butter
  • ¾ tsp kosher salt

Vegetables

  • 2 cloves garlic minced
  • ¼ red onion finely chopped
  • 1 carrot peeled and grated
  • 1 zucchini grated
  • ¼ cup red bell pepper finely chopped
  • ½ tsp thyme fresh, chopped
  • 2 stalks green onion finely sliced
  • 2-3 tsp vegetable oil
  • pinch kosher salt
  • pinch black pepper ground

Breading

  • ½ cup all-purpose flour
  • 1 cup almond milk or other plant milks
  • pinch salt
  • 2 tbsp corn starch
  • cups bread crumbs whole wheat or panko

Instructions
 

Let's Begin!

    Mashed Potato

    • Boil the potatoes for about 15-18 minutes until they're fork tender.
    • Drain the potatoes, then transfer in a large bowl. Mash the potatoes with almond milk, vegan butter, and salt. Set aside.

    Vegetables

    • In a large skillet, heat the vegetable oil, then saute the garlic, red onion, carrot, zucchini, and bell pepper. Cook for 2-3 minutes.
    • Add the thyme and green onions, then saute until tender and fragrant. Season with salt and pepper to taste.
    • Mash the vegetables into the potato mixture, then refrigerate until cool enough to handle.

    Forming and Breading

    • Measure out two spoon fulls of the potato mixture, then roll them into a ball or cylinder. Arrange the croquettes on a baking sheet lined with parchment paper. Chill or freeze the croquettes until very firm.
