I’ve been vegetarian for over 30 years but vegan (plant-based) for the last few years. Quite honestly, protein is never a problem with a good vegan diet. Yes, the flour substitutes work fine. In fact, we often use a white wheat flour in ours, although gluten free is used for those with gluten intolerances.
Kosher salt has a more open crystal, therefore the amounts need to be adjusted in baking. For every 1 tsp of kosher salt, you would use 3/4 tsp table salt. Either one works!
