Vegan Carrot Cake Overnight Oats:
- 2 medium carrots
- 1-2 cups old fashioned oats
- 1 ⅓ cup almond milk
- ¼ cup raisins or sultanas, dried berries
- 1-2 tbsp chia seeds
- 1 tbsp maple syrup or 1 small banana as a natural sweetener
- ½ tsp cinnamon ground
- ½ tsp vanilla extract
Optional but great addition!
- yogurt coconut
- walnuts or any nuts, chopped
- coconut shredded or flakes
In a bowl or mason jar, grated the carrots.
