Irish Hummus

Without tahini, this is a rich, creamy Irish hummus! This easy hummus is even better than Trader Joe's and can be used as a sandwich, dip, spread, and more!

Ingredients
  

  • 10 oz edamame frozen, thawed, shelled
  • 8 oz avocado ripe
  • 2-3 cloves garlic
  • 1 large lemon zest and juice, 3-4 tbsp fresh lemon juice
  • kosher salt to taste
  • black pepper
  • onion powder
  • 3-4 tbsp fresh cilantro finely chopped
  • 6 tsp olive oil
  • pita chips for serving
  • veggies

Instructions
 

  • In a food processor, combine all the ingredients from edamame to cilantro. Mix well till combined.
  • Pour the mixture in the olive oil while the food processor is working and blend for about 5 seconds more, or till combined.
  • Season to taste with pepper and salt. Serve with veggies and pita chips, if desired.
