- 4-5 medium potatoes
- olivolja
- kosher salt to taste
- black pepper
- 1/2 bunch asparagus
- lemon juice
Pesto
- 1-2 cups basil fresh
- 2-3 cups pumpkin seeds or sunflower seeds
- 1 clove garlic
- 8 tbsp nutritional yeast
- kosher salt
- black pepper
- 4 oz olive oil
Preheat the oven at 390F°C.
Cut the potatoes into 3 slices. Rub with olive oil the sliced potatoes.
Season with salt and pepper then cooked till they tender.
Make the pesto by combining all ingredients in a food processor excluding oil. While blending slowly add the oil.
Skinned the asparagus and dipped it in lemon juice.
Organize the asparagus ribbons on top of the pesto potatoes. Enjoy!
