Ingredients
  

  • 4-5 medium potatoes
  • olivolja
  • kosher salt to taste
  • black pepper
  • 1/2 bunch asparagus
  • lemon juice

Pesto

  • 1-2 cups basil fresh
  • 2-3 cups pumpkin seeds or sunflower seeds
  • 1 clove garlic
  • 8 tbsp nutritional yeast
  • kosher salt
  • black pepper
  • 4 oz olive oil

Instructions
 

  • Preheat the oven at 390F°C.
  • Cut the potatoes into 3 slices. Rub with olive oil the sliced potatoes.
  • Season with salt and pepper then cooked till they tender.
  • Make the pesto by combining all ingredients in a food processor excluding oil. While blending slowly add the oil.
  • Skinned the asparagus and dipped it in lemon juice.
  • Organize the asparagus ribbons on top of the pesto potatoes. Enjoy!
