Mexican Hot Chocolate Cookies

These cookies are decadent and delicious! They are made with cocoa powder and rolled in cinnamon powder. Perfect for any occasion especially in the winter season!

Ingredients
  

Easy-to-find ingredients:

  • 2 1/2 cups all-purpose flour
  • 3/4 cup cocoa powder unsweetened
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 3/4 tsp kosher salt
  • 2 cup butter unsalted and vegan; at room temperature
  • 2 cups confectioners' sugar
  • 3 tbsp flax seeds stir them into 3 tbsp warm water
  • 3 tsp cinnamon

Instructions
 

Easy-to-make cookies:

  • Preheat the oven to 4°F and line the baking sheets.
  • In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and kosher salt.
  • In a separate bowl, cream the vegan butter with confectioners' sugar until fluffy then gently add the flaxseed mixture.
  • Combine together the all-purpose flour mixture and vegan butter mixture until fully combined. and the dough form.
  • Stir together the remaining confectioners' sugar and cinnamon powder. Set aside.
  • Scoop the dough and form them into balls and roll them into a sugar and cinnamon mixture. Repeat to the remaining dough.
  • Place them into the prepared line baking sheets and bake them for 15 minutes. Allow them to cool before serving.
