Ingredients:
- 2 oz. hummus chickpeas-canned, rinsed, and strained
- 3 tbsp lemon juice
- 2 small garlic clove, peeled
- kosher salt to taste
- black pepper freshly ground
- 8 tbsp peas frozen, thawed
- 3 tbsp fresh mint chopped
- 2-3 tbsp fresh parsley optional, finely chopped
- 1-2 tsp lemon zest
Instructions:
Combine hummus, lemon juice, garlic, and 1/3 cup of water in a food processor. Cover and blend, until smooth.
Sprinkle with salt to taste. Cover until smooth, add the other ingredients as needed.
Chill, covered, until ready to serve.
