  • 2 oz. hummus chickpeas-canned, rinsed, and strained
  • 3 tbsp lemon juice
  • 2 small garlic clove, peeled
  • kosher salt to taste
  • black pepper freshly ground
  • 8 tbsp peas frozen, thawed
  • 3 tbsp fresh mint chopped
  • 2-3 tbsp fresh parsley optional, finely chopped
  • 1-2 tsp lemon zest

Instructions
 

Instructions:

  • Combine hummus, lemon juice, garlic, and 1/3 cup of water in a food processor. Cover and blend, until smooth.
  • Sprinkle with salt to taste. Cover until smooth, add the other ingredients as needed.
  • Chill, covered, until ready to serve.
