Let's gather the ingredients!
- 3½ cups coconut milk
- 3 tbsp granulated sugar
- 1 tsp agar-agar powder
- 1 vanilla bean
- 1 cup raspberry coulis or raspberry sauce
- ½ cup raspberries fresh
- fresh mint leaves for garnish
Let's Begin!
In a medium saucepan over medium heat, add coconut milk and sugar, then bring to a boil.
Whisk in the agar-agar, then continue to boil for 3 minutes while keeping an eye to ensure it doesn't spill over.
Cut the vanilla bean in half lengthwise, and use the back of your knife to scrape out the seeds. Add the seeds to the mixture, whisking well to combine.
Pour mixture into 6 individual serving bowls or ramekins lightly greased with oil. Set in the fridge to cool until set, about 1 hour.
Invert the panna cotta onto plates, then top with raspberry coulis, fresh raspberries, and fresh mint.
Serve and enjoy with family and friends!
