Pumpkin Pie Pudding with Walnuts

This pumpkin pie pudding with walnuts is one of my favorites. The pudding is creamy and flavorful, and the walnuts add a nice crunch. Plus, it's easy to make!

Ingredients
  

  • 2 cups pumpkin puree not filling
  • 8 oz. walnuts finely chopped
  • 1 tsp pumpkin pie spice or alternatively use ground ginger, nutmeg, or cinnamon
  • ¼ tsp kosher salt
  • ¼ tsp maple syrup

Instructions
 

  • In a high-speed blender, pulse all the ingredients until smooth and fluffy.
  • Transfer into a container or mason jar. Serve warm or refrigerate overnight.
