Pumpkin Pie Pudding with Walnuts
This pumpkin pie pudding with walnuts is one of my favorites. The pudding is creamy and flavorful, and the walnuts add a nice crunch. Plus, it's easy to make!

- 2 cups pumpkin puree not filling
- 8 oz. walnuts finely chopped
- 1 tsp pumpkin pie spice or alternatively use ground ginger, nutmeg, or cinnamon
- ¼ tsp kosher salt
- ¼ tsp maple syrup
In a high-speed blender, pulse all the ingredients until smooth and fluffy.
Transfer into a container or mason jar. Serve warm or refrigerate overnight.
