Sweet Potato and Kale Quesadillas

Let's gather the ingredients!
- 1 large sweet potato peeled and cubed
- ½ red onion chopped
- 1 clove garlic minced
- ¼ tsp cumin
- ⅛ tsp chili powder
- salt and pepper to taste
- 2 ounces kale chopped
- 1 tbsp olive oil
- 6 flour tortillas
- 3 tsp vegan mayonnaise
- 6 ounces vegan cheddar cheese see notes for the recipe
- 1 sprig cilantro

Let's Begin!
Cook the sweet potato and onion in a little olive oil over medium-high heat for about 5 minutes, until the onions are a bit translucent.
Add the garlic, cumin, chili powder, and season with salt and pepper to taste. Cook for another 1-2 minutes until the sweet potatoes are fork-tender. Transfer to a plate and set aside.
In the same hot pan, add the kale and cook just for 1-2 minutes until it turns a brighter green and begins to wilt. Season with salt and pepper to taste, then set aside.
Spread a teaspoon or two of mayo over one side of each tortilla. Place the tortilla in a pan over low heat, mayo side facing up and top with 1/3 of the sweet potato and kale filling.
Then, sprinkle on 1/3 of the shredded vegan cheese. Top with the remaining tortilla, mayo side down. Allow to cook for a couple of minutes until there are visible brown spots on the bottom of the tortilla.
Once it looks crispy, but not burnt, flip the tortilla carefully. Cook for another 2-3 minutes. Repeat for each quesadilla.
Serve with lime, avocado, vegan sour cream, and cilantro.
