Sweet Potato and Kale Quesadillas

This vegan meal packs a flavor punch with its robust combination of sweet potatoes and kale, plus it’s super nutritious. With a light yet crispy tortilla on the outside and a gooey vegan cheese center, you won’t believe how delicious this dish truly is – your family will be begging for seconds!

Ingredients
  

Let's gather the ingredients!

  • 1 large sweet potato peeled and cubed
  • ½ red onion chopped
  • 1 clove garlic minced
  • ¼ tsp cumin
  • tsp chili powder
  • salt and pepper to taste
  • 2 ounces kale chopped
  • 1 tbsp olive oil
  • 6 flour tortillas
  • 3 tsp vegan mayonnaise
  • 6 ounces vegan cheddar cheese see notes for the recipe
  • 1 sprig cilantro

Optional:

Instructions
 

Let's Begin!

  • Cook the sweet potato and onion in a little olive oil over medium-high heat for about 5 minutes, until the onions are a bit translucent.
  • Add the garlic, cumin, chili powder, and season with salt and pepper to taste. Cook for another 1-2 minutes until the sweet potatoes are fork-tender. Transfer to a plate and set aside.
  • In the same hot pan, add the kale and cook just for 1-2 minutes until it turns a brighter green and begins to wilt. Season with salt and pepper to taste, then set aside.
  • Spread a teaspoon or two of mayo over one side of each tortilla. Place the tortilla in a pan over low heat, mayo side facing up and top with 1/3 of the sweet potato and kale filling.
  • Then, sprinkle on 1/3 of the shredded vegan cheese. Top with the remaining tortilla, mayo side down. Allow to cook for a couple of minutes until there are visible brown spots on the bottom of the tortilla.
  • Once it looks crispy, but not burnt, flip the tortilla carefully. Cook for another 2-3 minutes. Repeat for each quesadilla.
  • Serve with lime, avocado, vegan sour cream, and cilantro.
  • Enjoy with family and friends!
