  • 4 medium tomatoes
  • 1 cucumber
  • 1 medium onion
  • 2 cloves garlic
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or other vinegar you prefer
  • ¾ tsp kosher salt
  • 2 tbsp basil fresh
  • ¼ tsp black pepper ground

Instructions
 

Let's begin!

  • Wash the vegetables well and peel the onion and garlic.
  • Roughly chop the tomatoes, cucumber, onion, and garlic.
  • Add all the vegetables into a blender with olive oil, vinegar, and basil. Pulse until smooth. Season with salt and pepper to taste.
  • Chill in the fridge before serving, or add a few ice cubes to cool it immediately.
  • Serve chilled, and enjoy with family and friends!

Notes

To make the gazpacho two colors like in the photos, simply blend the cucumber separately from the tomatoes and other ingredients. Then swirl it together when serving.
