Tomato and Cucumber Gazpacho
Let's gather the ingredients!
- 4 medium tomatoes
- 1 cucumber
- 1 medium onion
- 2 cloves garlic
- 4 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar or other vinegar you prefer
- ¾ tsp kosher salt
- 2 tbsp basil fresh
- ¼ tsp black pepper ground
- Wash the vegetables well and peel the onion and garlic.
- Roughly chop the tomatoes, cucumber, onion, and garlic.
- Add all the vegetables into a blender with olive oil, vinegar, and basil. Pulse until smooth. Season with salt and pepper to taste.
