  • 1 onion chopped
  • 1 tbsp ginger fresh, grated
  • 5 cloves garlic minced
  • 1 chili chopped
  • 400g can peeled tomato chopped
  • 2 tsp coriander ground
  • 2 tsp garam masala
  • 1 tsp cumin
  • ½ tsp turmeric powder
  • 2 tbsp coriander chopped

    Roasted Cauliflower

    • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
    • In a bowl, toss together the cauliflower, oil, and spices until the cauliflower is evenly coated.
    • Transfer the cauliflower to the prepared baking sheet, then bake for 25 minutes until the cauliflower is golden brown.

    Tomato Curry

    • In a food processor, put the onion, ginger, garlic, and chili pepper with a dash of water, then pulse until the mixture forms a smooth paste.
    • Heat a little oil in a saucepan and reduce the paste for about 5 minutes until slightly thicker and aromatic.
    • Add all the spices plus a tablespoon of water to stop the pan from being too thick. Stir and simmer gently for another couple of minutes.
    • Pulse the tomatoes in the food processor, then pour them into the saucepan. Bring to a boil then simmer gently for about 15-20 minutes.
    • Serve the cauliflower with the curry sauce. You can either mix the cauliflower into the sauce in the saucepan or serve it on top of the sauce. Garnish with fresh coriander on top.
