- 8 medium carrots peeled and chopped

cups red lentils rinsed and drained
- 1 onion chopped
- 3 tsp ginger grated
- 1 tsp turmeric ground
- 6 cups water or vegetable stock
- 2 tbsp extra virgin olive oil
- 4 tbsp coconut milk
- salt and pepper to taste
- 1 small bunch parsley chopped
Let's Begin!
In a large pot, heat the olive oil, add the onion, then saute until it starts to soften.
Add the carrots and lentils to the pot. Stir for a couple of minutes and then add the water, ginger, and turmeric.
Bring to a boil and let it simmer for 20 minutes before removing it from the heat.
Blend the soup until smooth using a blender. Season with salt and pepper to taste.
