Let's gather the ingredients!

  • 8 medium carrots peeled and chopped
  • β…” cups red lentils rinsed and drained
  • 1 onion chopped
  • 3 tsp ginger grated
  • 1 tsp turmeric ground
  • 6 cups water or vegetable stock
  • 2 tbsp extra virgin olive oil
  • 4 tbsp coconut milk
  • salt and pepper to taste
  • 1 small bunch parsley chopped

Instructions
 

Let's Begin!

  • In a large pot, heat the olive oil, add the onion, then saute until it starts to soften.
  • Add the carrots and lentils to the pot. Stir for a couple of minutes and then add the water, ginger, and turmeric.
  • Bring to a boil and let it simmer for 20 minutes before removing it from the heat.
  • Blend the soup until smooth using a blender. Season with salt and pepper to taste.
  • Sprinkle the soup with thyme, and serve while it’s still hot.
  • Enjoy with family and friends!
