Vegan Carrot Lox
Perfectly savory and full of delicious flavors, this vegan-friendly version of a classic is sure to add some pizzazz to any brunch or lunch. Not only that, but it requires pretty minimal ingredients that are easy to find at most grocery stores.

- 4 large carrots
- kosher salt for coating
- 3 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- ½ tsp smoked paprika
- ½ lemon lemon juice
- black pepper freshly ground

- bagels
- vegan cream cheese
- cucumber slices
- capers
- red onion thinly sliced
- dill
Let's Begin!
Preheat the oven to 475°F then line a baking dish with parchment paper.
Coat the bottom of the baking dish with a ¼-inch layer of salt, then place the whole carrots in the dish and sprinkle with a good amount of salt.
Roast the carrots for 40-60 minutes until easily pierced with a fork, but not mushy.
For the marinade, In a small bowl, mix the olive oil, vinegar, paprika, juice of half a lemon, and several grinds of freshly ground black pepper.
Remove the carrots from the oven and let them cool. Making sure to remove all the salt that sticks to the carrots.
Use a knife to slice a thin strip off one side of the salty skin, and then use a peeler to peel the carrot into ribbons.
Place the strips in the marinade and toss to coat. Transfer to the refrigerator and marinate for 15-30 minutes.
Serve with bagels, cream cheese, cucumber slices, capers, onions, and dill.
